Unlike most herbs, mate naturally contains caffeine. It is fermented and roasted, like many teas, and contains about half the caffeine found in a comparably-sized cup of coffee (depending, of course, on the strength of your brew.)

Brew about 7 minutes for a lively cup. Add steamed milk for a rich, frothy latte.

In the 19th century, Indians native to Latin America infused and imbibed yerba mate to recover their strength, feed their bodies and cure their illnesses (the herb is said to have curative and stimulant properties, as well as vitamin and mineral elements.) There it is made into a thick paste and drunk out of a hollowed-out gourd through a tube (""bombilla"") with a filter at one end to screen out the sediment. Today, it is cultivated extensively in Argentina where mate drinking is an all-night social event.
